Tonight I thought I'd share a recipe. I took my inspiration from Pinterest. After all isn't that where all inspiration comes from?

I did not use a crock pot because that requires a lot of planning ahead. Instead I cooked 2 chicken breasts in a covered casserole in my oven for 45ish minutes. I cooked it with 1 cup of water and 1 tbsp of taco seasoning. I make my own taco seasoning. It's easy, less expensive, tastes better and doesn't have any preservatives.
When it was done cooking I used my KitchenAid Mixer to shred my chicken (another little fun-fact from Pinterest). I served the yummy chicken with regular taco toppings (cheese, sour cream, lettuce, black olives, tomatoes and salsa.

Be A Student
I always try to be a student and learn something. What did I learn today? I learned that I shouldn't put my toddler down for a nap in a disposable diaper unless I wanted to do more laundry. It was a valuable lesson to learn.

Doggie Spa Day
Today was Doggie Spa Day for Lucy, bath, clean ears and nails. Poor thing. You would think we were torturing her. It was the first time my daughter "helped". I don't think Lucy enjoys being poked while she is wet any more than dry. She was a good sport though!

Extra, extra
I just finished taking the pits out of 2lbs of cherries. It wasn't as much of a pain as it was when I did 32lbs of strawberries. When I can get fruit at a great price I like to buy extra. Whatever my daughter doesn't eat, I freeze so we can use it in smoothies.
It is super easy to freeze your extra fruit. Wash everything really well to remove any wax, dirt, pesticides, etc. Pat them dry with a paper towel and freeze them in a flat layer in your freezer. I usually use a Silpat mat or parchment paper in the bottom of my pan so the frozen fruit won't stick.

Now I'm blogging
I'm not a writer. I'm a mom with 2 kids and a husband...and a Doodle. That is a Labradoodle, named Lucy.
My husband and I thought long and hard about getting a dog, who came before the kids. We both love Labradors, but hate the shedding and hair. A Labradoodle seemed like a natural choice. We wanted a dog that would snuggle with us and want to be with us. We thought it would be great to take her to the dog park and let her run and play with other dogs. What we didn't know is that she wouldn't do any of that willingly. She cuddles with me out of obligation and takes up 3/4 of the bed when she's allow on there. She doesn't like to run. The vet suggested that she might not be athletic. Huh? Is that possible for a dog? And other dogs scare her - especially the little ones. Basically my dog is crazy. In every way possible. Oh and by the way - she sheds. A lot.
